Better Than Chicken and Dumplings

Trying this recipe tonight. It sounds just about how I make my Chicken Casserole except for I mix a can of cream of chicken soup with a can of cream of mushroom and about a half a cup of water then pour it over my chicken and put stuffing on top. Hubby doesn't like the stuffing part so I am thinking he will really like this recipe.

I feel I may have insulted Bushman with my question and I'm so sorry if I did. If you knew me, you would realize it was surely not my intention. Bushman is FAMOUS on here for his good recipes and reliable responses to any recipe request. I guess since he hasn't responded to my question......I just hope I didn't insult him. My hubby likes hard dumplings (no dirty minds here please) but I grew up on fluffy dumplings so since I'm the head cook at my house, I attempt to make them fluffy......and encourage my hubby to adapt to my way! :) And he has. Sometimes my dumplings end up being hard......not really sure why......I do the Bisquick kind......but they're always good......soft or hard!!!! Paula Deen would like this post! LOL

Dice and cook a potato in mixture to reduce salty taste. Potatoes will generally reduce the saltiness taste in most stews, etc., when cooked along with or added to too salty foods.

Made this on Wednesday evening. Very good! Will definitely make it again when my son is home from college (he can seriously eat some chicken/dumplings). Had enough for lunch Thur. and taking it again today for lunch. Directed a few coworkers to this recipe when they expressed interest in my dish.

One question....is there an alternative to the cream of chicken soup? I used reduced sodium but it was still a tad salty, BUT not so much that I didn't gobble it up.

This is almost exactly how I make my chicken pie. No onions though, I use 1 stick of butter, and make my biscuits and then spoon them on top of the chicken mixture.

Bushman......is this gonna' be like chicken and dumplings or chicken pie? I'm really thinking about trying this in the next couple of days since I have a chicken thawing in the fridge. I just don't want to tell hubby we're having dumplings......so hence my question. :)

Better Than Chicken and Dumplings
3 to 5 chicken breasts
1/4 cup butter
1 cup self rising flour
1 cup milk

1 can cream of chicken soup
2 cups chicken broth

Preheat oven to 400�. Place 1/4 cup of butter in 9 x 13 inch baking dish and place in oven to melt. Boil chicken breasts until done. Reserve 2 cups of the broth. I would add a little diced onion to the water when boiling chicken breasts for flavor along with a dash of salt. Cool chicken breasts and tear into pieces when cooled to the touch. Place chicken pieces in baking dish over melted butter. Mix flour and milk together and pour over chicken. Whisk broth and cream of chicken soup together and pour over flour mixture. Do not stir. Bake in preheated 400� oven for about 30 minutes or until top is browned.
