Chili Con Carne

Chili Con Carne
5 pounds ground chuck
1 large onion, diced
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
2 cloves garlic, minced
1/2 cup chili powder
2 tbsp ***in
1 tsp chipotle
2 (15 oz) can pinto or kidney beans, drained
2 (10 oz) cans tomato sauce
1 (10 oz) can tomato paste
1 tbsp black pepper
2 tsp salt, or to taste
2 cup water or as needed
cayenne to taste


Put the beef in a large pot over med-high heat. Cook, while stirring to crumble the meat into small pieces, until browned. Drain off the grease. Add the onion, garlic, and bell peppers. Cook for about 3 minutes.

Put in the rest of the ingredients and simmer over low heat, uncovered, stirring occasionally, for 60 minutes, or until the meat is tender. Add more water if needed during cooking to adjust to desired thickness. Taste for salt and spiciness, adjust, and serve hot.

This chili was made to go with some great cornbread.

My mom started the Chili Con Carne recipe in our family and I'll tell you what......it is some kind of good. It's a bit different from the recipe posted here, and that does not mean my mom's is better, but it is soooooo good. And Yes, I need to post it here and I will (hopefully) when I lay my hands on the recipe. It's a lot of onions and celery......and ground beef......and tomatoes. I bought larger pots than I had when I started making it, because you don't want to just make a little. It's so good on a cold day with just saltine crackers. It's so good......it makes you want to slap your husband!!! LOLOL That reason always comes in handy! :)

CHILI CON CARNE
INGREDIENTS

3 cans Red Beans (rinsed)
1 lb 70/30 ground beef
1 lb 93/7 ground sirloin or chuck
3 bay leaves
1/2 tsp ***in
1-1/2 tsp chili powder
1 tsp salt
1 or 2 large diced sweet onions
1 tbsp chopped jalapeno peppers
1 tsp red pepper flakes
2 tsp ground black pepper
1 small, diced, seeded sweet pepper
2 cans petite diced or crushed tomatoes
1/2 cup tomato juice
1/2 cup V-8 juice
1 large or 2 regular ribs peeled celery, diced fine
1 tbsp apple vinegar

DIRECTIONS

saute onions, celery, and bell pepper until transparent
brown ground meat and drain
add to sauteed vegetables
add beans
add all other ingredients except tomatoes and juice, cook until meat is no longer red
add all other ingredients, bring to a slow boil, then cover and reduce heat to low.
taste and adjust salt as necessary
add tomatoes and juices
stir frequently and taste often to assure flavors are to your liking

if not hot enough then add a few dashes of Texas Pete (if too hot for your taste add 1 scant tbsp dark cocoa powder and 1 tbsp sugar)
