One of the reasons it would become grainy is if even a drop of water were put in the mixture at the wrong time while cooking. To much stirring will do it also. My grandmother taught me to make fudge and so much of it is the feel for it that you get after making it about a 1000 times. I have ruined it when I have not been patient and in a rush

there are many many reasons as to why fudge becomes grainy...could be anything from overheating the mixture...old old or processed ingredients...stirring to long....

for me...it was mostly the cooking process...you just gotta take your time and practice...

sorta like making biscuits..which, if it wasn't for grannyfelts...I would have never made a decent biscuit...and still they're now only decent. I like the melt in your mouth biscuits...

the reason they tell you not to make it on a rainy or overcast day...is because it will not set up....and like you said that too will cause it to be grainy....fudge is just weird

I have made orange dreamsicle fudge several times over the years. A couple of years ago, the last time I made it, it was grainy. This usually does not happen when I make any type of fudge. This fudge is a little different in that you basically make white chocolate fudge, dip some out, add orange flavoring and swirl the white chocolate back into it to make it pretty and have that white chocolate flavor mixed among the orange.

Someone mentioned humidity and not to make it while it's raining. My husband wants it again this year and I would like for it not to be grainy. Any suggestions? Thanks.
