easy macaroni salad recipe

Macaroni Salad, my restaurant favorite

Ingredients

8 oz elbow macaroni, cooked, rinsed, and drained (cook macaroni about 10 minutes in boiling water until just

al dente.

1 cup Dukes or Hellmans mayonnaise

1 tbsp apple cider vinegar

1 tbsp fresh lemon juice

1 tbsp yellow prepared mustard

1 tsp sugar

1/2 tsp salt (preferrably sea salt)

1/4 tsp black pepper (optional)

1 cup diced celery

1 cup chopped sweet peppers

2 tbsp pimiento

1 cup Mt Olive sweet chopped pickles

1/4 scant cup finely chopped sweet onion (optional as it reduces the storage life as the onion gets stronger. I never put onion in the restaurant salad but would add it as a side for any who asked for it.)

1 scraped grated carrot

Directions

Combine all ingredients except macaroni. When well blended then add to cooked macaroni. Adjust seasonings and savories to suit your taste.

cover tightly with a double layer of plastic wrap or in tightly covered container. Refrigerate. Serve chilled.

Cook 8 oz box or macaroni, drain and run cold water over it until it becomes cool. While macaroni is cooking, boil 2 eggs, when done, peel and the, chop, add one cucumber, one tomato, one onion (choped) . Add 1/2 to 1 cup mayo (depending how moist of dry you want). Add salt and pepper, mix well and serve. If you like it cold, place in refridgerator until cold. If it taste like it needs something else I add seasoned salt.

There are many vary ways to make this, you can add black olives, celery, greated carrots, I have even seen spagetti used instead of macaroni with italian dressing instead of mayo.

Play abount with it and you will be amazed what you come up with.

yes mine is very easy .my family and friends love it ok here it is .it takes daks ham,onion,cheese block ,cut this up while macaroni cooking .drain and rinise until cool .then and every thing together and miracle whip. is what i use but i guess you and use what ever you want .hope you enjoy
