This artichoke dip recipe is the one that the restaurant in Boone, Murphy's, uses. It is very forgiving and you can tweak the amount of ingredients to suit your tastes. My husband does not like spinach so I don't put that in. I have used fresh and frozen spinach with good results. It is a cold dip.

20-36 ounces marinated artichoke hearts

8 ounces frozen spinach-squeezed dry/thawed

16 ounces of cream cheese-softened

1/2 cup parmesean cheese

1/2 cup romano cheese

1/2 cup Dukes mayo

3 Tablespoons (at least) minced garlic

Take 1/3 of artichoke hearts and coursely chop them in the food processor. Remove and set aside.

Dump everything else in the food processor and process until uniform through out. Scrape dip out of food processor into large bowl and add the coursely chopped artichokes. Mix with a spoon until uniform through out. This dip is stiff so expect to have to work a little to get the dip mixed up well. I serve this with wheat thins or other crackers. It can also be served with those little loaves of bread, either toasted or not. It is addictive to the point that if you tell friends you are making it, they will show up a couple of hours later wanting some to take home!!

I have a bunch of c*cktail weenies in the freezer but every time I try to make anything with them, I am very disappointed in the flavor. I don't know what I'm doing wrong. I have tried just plain old bbq sauce on a pot on the stove and warm slowly, I have tried grape jelly and worc sauce and I have just fried them in a cast iron skillet, slowly, on the stove top. I have even considered just giving the dang things to my family members since I keep ruining them when I try to prepare them but my husband swears he loves the dang things, "when they are fixed right." Of course, he won't tell me what "right" is and I guess he may not know. Anyway-HELP ME PLEASE.

Try this one for the dip, pretty good.

1 (14 ounce) can artichoke hearts, drained and chopped
2/3 cup sour cream
1 cup cream cheese
1/3 cup mayonnaise
2 teaspoons garlic, minced

Preheat oven to 375F., Mix together Parmesan cheese, spinach, and artichoke hearts., Combine remaining ingredients and mix with spinach mixture. Bake for 20-30 minutes.

I make my c*cktail weenies in a crock pot with bbq sauce, mustard, wostershire, and grape jelly. I dont use a recipe I just add to taste but I use more bbq sauce than anything else.
